Do not use beans that are older than 2 to 3 months-
aged beans will greatly affect the taste of your coffee.

This will ensure your beans are at their freshest. A
finer grind will bring out more of the flavor in the
beans.

We advise a heaping teaspoon per cup of coffee brewed.
This way you will experience the full-flavor of the
bean.

you use to make it.

What
classifies a coffee as a superior whole bean coffee
roast?
Gourmet
coffee is fast becoming a household term. It is now
hard to determine which gourmet coffee roasts
are truly "gourmet".
At DiFrancesco's Cafe, several characteristics set our
whole bean coffees apart...

First
we select only the finest, 100% Arabica, High Mountain
grown beans from the Central American regions of
Costa Rica, Honduras, and Guatemala. Arabica, High
Mountain grown coffee means that these beans mature
much later in the season, under the cool, moist
tree canopy that shelters them, rather than more
quickly, under the hot sun of the valleys.

Secondly,
we carefully clean the coffee beans, removing the
hull chaff, which is disposed of, not blended back
in during the roasting process as many roasters
do in order to increase weight. We even temperature
control the green beans prior to roasting, to maintain
their maximum freshness.

Next,
we slowly roast the beans just long enough to release
the full flavor of the coffee bean. You will find
that although our roasts are not dark, each produces
a rich cup of gourmet coffee. Many people are accustomed
to "dark" or "French" roasts, where the beans are
actually "burned" in order to increase the flavor.
Burning the beans enables a darker more full-bodied
cup of coffee to be produced from a lower quality
bean, but introduces bitterness and a lingering
after-taste. Even when our gourmet coffees are brewed
very strong, they never taste bitter.

Finally,
we package the coffee immediately after roasting
in our pressure relief bags, to ensure maximum freshness.
Our gourmet whole bean coffees should be stored
in a cool, dark and dry place (we recommend your
refrigerator) with their bag tightly sealed. Using
the coffee promptly will ensure that with each cup
you will always enjoy the finest truly gourmet whole
bean coffee available anywhere.
These
coffees of distinction are fresh roasted in small quantities
and packed quickly in unique pressure relief pouches.
All of this occurs in a temperature-controlled environment
from raw bean storage until shipment. A great taste
experience awaits you resulting from the freshest gourmet
coffee available.
Our
coffees are certified to the stringent "Kosher" quality
standard. Kosher certification is considered to be the
Good Housekeeping Seal of Approval of gourmet foods.
The DI FRANCES COMPANY uses only Swiss Water Processing
in the decaffeinating process, which is renowned in
the coffee industry as 100% chemical free.
Only
pure water is used to decaffeinate these specialty coffees.
The decaffeinated blends maintain their origin characteristics
and may be mistaken as 'regular' in blind taste tests
by both consumers and coffee professionals alike, due
to the astonishing depth and flavor of the coffee.

Why
is the Swiss Water Process so desirable?
Standard decaffeination processes utilize harsh chemicals
to remove the caffeine. This
has two deleterious effects. First, the coffee is stripped
not only of its caffeine, but also its flavor. Secondly,
although the beans are rinsed afterward, some traces
of these strong chemicals remain and are later consumed
with the coffee. In contrast, our Swiss Water Decaffeination
process uses only cold fresh water to slowly wash the
caffeine away, rendering the beans 98% caffeine free.
Although this process is much slower and more costly,
it is by far healthier and the beans retain the vast
majority of their flavor. We prefer to sell you pure
and healthy products.
You might be surprised at how many of the 'name brand'
popular coffees actually use chemicals to decaf their
coffee -- take a look at their label!
Why
do we still choose to hand label our products?
Many products claim to be gourmet, when in reality they
are only pricier versions of mass produced products.
All of our coffees are small batch selected and roasted
to perfection. Our chocolates are also truly gourmet
quality. We believe that the same care taken in the
selection and production of each product should carry
through to its packaging. Therefore, we design all of
our own labels in-house and hand label each item, as
it is produced and packaged. We believe that our actions
reflect the high level of personal concern we have for
each product we sell and each customer we satisfy.
Why
is Kosher certification important?
We believe in Kosher certification as it is just one
more form of assurance to our customers and us that
they are receiving the finest, most carefully prepared
product available. We firmly believe in Kosher certification
and fully support its application to food products.
Are
our coffees organic?
To the best of our knowledge our coffees are organic.
We cannot absolutely control what happens on the mountainsides
of every coffee plantation that originates our beans
and therefore, we will not certify what we do not know
with absolute certainty. We believe that the new standards
being promulgated by the United States FDA will help
to at least clarify and standardize the definition of
what is meant by organic. Further, we hope that one
day we well be able not just to certify all of our coffee
beans as 100% organically grown, but also to know that
all coffee producers are living up to what "100%
Organic" really means. Today organic certification
does not necessarily ensure that no chemical fertilizers
or pesticides were used.
What
is the Shelf Life of our coffees?
We temperature control the storage of all of our coffee
beans prior to and following roasting to ensure freshness.
Our beans are packed immediately after the roasted beans
have cooled, frequently the same day they are roasted.
Whole beans in our vapor relief bags should be stored
in a cool dry place below 70° degrees Fahrenheit.
The best place is in your refrigerator. Allow the beans
to warm for a few minutes before grinding, unless the
humidity is high. Our coffee beans are best when brewed
within sixty to ninety days of purchase. We work closely
with our retailers, encouraging them to order more frequently
and in small quantities, to ensure that customers always
receive the freshest coffee possible.
